Why We Created This Experience

Mezcal is far more than a drink. In Oaxaca, it carries memory, ritual, agriculture, and generations of practical knowledge. We created this experience for people who want to go beyond tasting mezcal and instead understand what it means to take part in its making.

That is why this workshop is centered on Pechuga mezcal, one of the most distinctive and ceremonial styles of mezcal made in Oaxaca. Rather than standing on the sidelines, guests are brought into the process itself, from the agave landscape and the ingredients used in distillation to the final tasting and the bottle they help create.

Our goal is for you to leave with more than a bottle. We want you to come away with a deeper understanding of the people behind mezcal, the ancestral methods that keep it alive, and the cultural weight carried inside every step of the process.

What Makes This Experience Different

Many mezcal outings focus on tasting alone. This experience is built around participation. Guests do not only hear about Pechuga mezcal or watch it being made. They actively step into the process and help prepare part of the distillation themselves.

The experience also takes place in a family-run palenque, which gives the day a much stronger sense of intimacy and continuity. Instead of receiving a polished overview from a distance, you spend time in a real working environment where mezcal is still tied to land, labor, ritual, and local life.

Because this is a small public group that only runs once a week, it stays personal even though it is not private. That balance makes it easier to connect with the mezcaleros, ask questions, and feel the full rhythm of the day without the atmosphere of a large tour bus experience.

What to Expect During the Day

This is a full-day group experience that runs every Saturday and begins at a central meeting point in Oaxaca City, shared automatically after booking. From there, the group heads out into the countryside to begin a much deeper look at mezcal than most visitors ever get to experience.

The day begins with time in the agave landscape, where you learn about maguey and its place in Oaxacaโ€™s heritage before continuing on to the palenque. This first part helps guests connect the finished spirit back to the plant itself and understand that mezcal starts long before the still.

Once at the family-run palenque, the group takes part in a traditional limpia, an ancestral cleansing that prepares both body and spirit before the work begins. This ritual is not a decorative add-on. It is part of how the mezcaleros frame the process and relates directly to the cultural meaning of the day.

From there, the workshop becomes hands-on. You will help prepare ingredients for the Pechuga distillation and learn how fruits, grains, and a meat element contribute to the depth and distinctiveness of the final expression. This is one of the rarest parts of the day because guests are not only hearing about the process, they are physically part of it.

As the distillation moves forward, the group shares a home-cooked meal at the palenque. This part of the day gives everyone a chance to slow down, enjoy the setting, and connect more fully with the people behind the process. Later, you will taste small-batch mezcals at different stages of production and compare the final Pechuga distillate with other expressions. Your payment will be placed into a Lifetime Deposit (Safety Deposit Box). This can be:

Refunds are not available unless WSE Travel cancels your booking due to reasons beyond your control.

A 50% rebooking fee will apply. This helps offset the compensation obligations to your dedicated team of local guides and service providers, who have reserved their day exclusively for your private tour and may not be able to secure alternate work with us or others on short notice.

Less than 7 Days’ Notice

The full cost of the tour is retained to pay the locals contracted in full. As this is a private experience, your local teamโ€™s time is fully dedicated to your session. A new team will be hired for any future rebooking.

    We had an incredible day in Santiago Matatlan, Oaxaca for a Mezcal Tour and a huge part of that was Octavio. He took us to the Palanque where we met Lidia, she is the master mezcal maker at that palenque who supervises the entire artisanal production process of mezcal, from the selection of the agave to the final distillation. She explained the production process of her different mezcales in detail, which is extremely interesting, but above all, you can see how much love she puts into it. We were able to help Lidia with the process to make our own Mezcal de Pechuga bottle (only mezcal tour that lets you make your own mezcal!). While we waited for our mezcal to be distilled, we had the most delicious mole with freshly made tortillas.
    This felt like a truly authentic experience and a great way to connect with Oaxacan culture.
    We got lots of behind the scenes insight youโ€™d never get on your own. If youโ€™re interested in mezcal or just want a memorable day in Oaxaca do this tour you wonโ€™t regret it!

    I’m pretty lucky to have lived in Oaxaca for 6 years now. I recently took this tour because no matter how long I’ve lived here, getting to make your own mezcal is just not something you stumble upon. Trust me when I say this is a truly unique experience!

    The day started out great. Our guide was early and was super friendly and knowledgeable. It about a one hour ride from the pick up spot in Centro and the whole time he was giving us background on the artisanal production of mezcal, answering questions, and getting us pumped for the day. We arrived to a really nice mezcalina cocktail as we were welcomed by our hosts for the day. It’s always fun to get outside of the city and into the pueblas, especially Matatlan. The scenery out there is out of a magazine, I swear! Haha.

    Lydia was our mezcal maestra, and she started off by explaining the history and the generations behind her family’s palenque. If you’ve been to distilleries around the world, or seen how other liquors are made… I promise you this is NOT that. And I think that’s really the best part of this tour… you get to be HANDS ON with the process, not just having it explained to you. We all got to pour mezcal into the copper pots, start the fire, and be a part of the whole process for the day.

    We definitely earned our mezcal!

    While the fire was going, we had an amazing homemade mole negro lunch, then saw our mezcal starting to drip out of the still… time fill our shot glasses and drink it straight out of the pot! While we were waiting for it to fill, we tried all of the different mezcals they make at the palenque. Again, our guide was so knowledgeable and walked us through every step of the process. There is so much to mezcal, and to understanding, feeling, and finally tasting each plant, and our guide really made the experience so much better by answering questions, and continuing to fill our glasses :)

    All in all, I believe we tried 10 different mezcals. One of the best parts for me was getting to taste two espadins side-by-side that were each distilled in different ways there on the palenque. One in a copper still and the other in clay pots. The difference was wild!

    We finished up the afternoon by getting to bottle and label our own mezcal, and take home our very own batch! We bought some amazing mezcals from Lydia as well. This is stuff that’s really not easy to find in stores, and so much richer in flavor than anything you can find outside of Oaxaca.

    As someone who has lived here for quite some time, I don’t find myself often doing tours anymore… but this is just too unique of an experience to pass up! 10/10 recommend. You’re just not going to find another tour like this… and getting to bring home a bottle (full size!) of your own mezcal at the end is really unbelievable.

    Going to a palenque is cool. Taking tours of them and doing tastings is rad. But making your own!??! Do not miss this opportunity.

    It is the perfect tour to learn more about mezcal and the fact that you get to make a special ceremonial mezcal makes it one of the best experiences one can have in and around Oaxaca. Lidia and her family were incredibly friendly and the food was amazing.

    By the end of the tour, I had a much better understanding of mezcal and I cannot wait to drink the pechuga mezcal once I’m back home.
