We created this cooking class for travelers who want more than just a good meal and would rather understand the ingredients, methods, and stories behind the dishes themselves.
That is why this experience begins where so much Oaxacan cooking begins: the market. Before you cook anything, you will spend time with the ingredients, the vendors, and the local context that give these dishes their meaning. From there, the class moves into a peaceful cooking space where those ingredients become mole, tamales, and fresh salsas under the guidance of local experts.
Our goal is for you to leave with more than recipes. We want you to come away with a stronger feel for Oaxaca through its flavors, a better understanding of the ingredients that define the region, and enough practical knowledge to carry some of those dishes back into your own kitchen at home.

From there, the class opens with a guided walk through a traditional market, where your host introduces the ingredients that shape many of the dishes most closely tied to Oaxacan cooking.
As you move through the market, you will learn about dried chiles, herbs, masa, and other ingredients that help define the regionโs food identity. This first part of the class gives guests context before the cooking begins and helps connect the finished meal to the vendors, produce, and daily rhythms of local life.
After the market, the group takes a short uphill walk to the open-air kitchen space. The setting gives the class a more relaxed rhythm and a welcome shift away from the city center. Once there, the cooking begins in earnest, with the group preparing three essential Oaxacan dishes: mole, tamales, and fresh red and green salsas.
You will learn how these dishes come together step by step, from ingredient preparation to the balance of flavors that makes them work. Mole, in particular, gives guests a feel for just how layered Oaxacan cooking can be, while tamales and salsas help show the practical side of techniques that can still be recreated at home.
Once everything is ready, the group sits down to enjoy the meal together. At Where Sidewalks End, your reservation is more than a transaction. Itโs a direct contract with local professionals who rely on this work as a primary source of income. As such, we are obligated to honor the livelihoods of our local partners, including guides, Ajarns (masters), and drivers, who dedicate their time exclusively to your experience.
In many of the destinations where we operate, labor protections and fair wage commitments are upheld by local laws, and we are both ethically and contractually required to adhere to them. Once a booking is confirmed, the service providers committed to your experience are financially compensated for reserving their time, even in the event of cancellation. This ensures fair and dignified treatment for all involved in delivering your experience.

Your payment will be placed into a Lifetime Deposit (Safety Deposit Box). This can be:
- Used for a future date
- Transferred to a friend or family member
Refunds are not available unless WSE Travel cancels your booking due to reasons beyond your control.
7โ14 Days’ Notice
A 50% rebooking fee will apply. This helps offset the compensation obligations to your dedicated team of local guides and service providers, who have reserved their day exclusively for your private tour and may not be able to secure alternate work with us or others on short notice.
Less than 7 Days’ Notice
The full cost of the tour is retained to pay the locals contracted in full. As this is a private experience, your local teamโs time is fully dedicated to your session. A new team will be hired for any future rebooking.
