We believe one of the best ways to connect with a culture is through its food, especially when that food carries stories that stretch back through generations.

That is why we created this experience around Oaxacan chocolate, not only as something delicious to taste, but as a doorway into the wider story of cacao in Oaxaca and the prehispanic Mesoamerican world. The day is designed to help guests understand chocolate as craft, history, ritual, and everyday pleasure all at once.

Once you arrive, you will begin with the story of cacao itself. You will learn about its place in the prehispanic world, how it spread through time, and why Oaxacan chocolate still carries such a strong sense of identity today. This gives the workshop much more depth before the practical side begins.

The workshop then becomes fully hands-on. You will toast raw cacao beans, peel and shell them, and work your way toward the cacao nibs that form the heart of the final product. One of the most memorable steps is the grinding process, which is bike powered and adds a fun, physical, and very tactile element to the day.

From there, you will continue turning the cacao into a smooth paste, then customize your own chocolate with ingredients such as sugar, cinnamon, or other spices. Once your mixture is ready, you will pour it into molds and begin shaping your own chocolate bars to take home with you.

At Where Sidewalks End, a reservation is more than a transaction. It is a direct commitment involving local professionals who rely on this work as a primary source of income. This includes guides, artisans, drivers, and other local partners who reserve their time specifically for your experience.

In many of the destinations where we operate, labor protections and fair wage commitments are upheld by local laws, and we are both ethically and contractually required to honor those commitments. Once a booking is confirmed, the service providers connected to your experience are financially compensated for reserving their time, even in the event of cancellation. If You Need to Cancel or Reschedule

All bookings are subject to the following terms:

More than 14 days’ notice
Your payment will be placed into a Lifetime Deposit (Safety Deposit Box). This can be:

  • used for a future date
  • transferred to a friend or family member

Refunds are not available unless Where Sidewalks End cancels your booking due to reasons beyond your control.

7-14 days’ notice
A 50% rebooking fee will apply. This helps offset the compensation obligations to your dedicated team of local guides and service providers, who have reserved their day exclusively for your private tour and may not be able to secure alternate work on short notice.

Less than 7 days’ notice
The full cost of the tour is retained to pay the locals contracted in full. As this is a private experience, your local team’s time is fully dedicated to your booking. A new team will be hired for any future rebooking.

Travel Insurance or Liability Waiver Required

Because life can be unpredictable, and because we are required to uphold our commitments to local partners, all guests must either:

    The most delicious way to spend a morning in Oaxaca! Thank you to our lovely local guide Victor and to the folks at WSE, we loved this hands-on experience. You get the chance to do the whole process, Bean to Bar, all in the a few hours. This is a chocolate lovers dream, you get to taste more than 10 different chocolates. Oh and make the Hot chocolate the traditional way Oaxacan way, which was super interesting and loved this learning element of the tour.

    Definitely one of the most fun tours I’ve done anywhere and if you love chocolate as I do you’ll be in heaven. The couple that hosted us were absolutely wonderful and it was so evident that they have a true passion for the tradition and craft of making cacao/ chocolate.

    This amazing experience included learning about the importance of cacao for the people of Oaxaca, then making our own chocolate bars from scratch (which you get to take home!) followed by endless chocolate tasting that left me in a sweet daze with a huge smile on my face.
